I've been to Jose several times over the last few months and generally it's been great. The staff are friendly and welcoming and do their best to find you a space in the tiny and always crowded venue. Croquetas are just perfect and good range of fresh sea food and creative fish and meat dishes. The kitchen is small but perfectly organised and the dishes are served with clockwork efficiency. Food prices are fine, although the wine is in some cases a tad expensive, draft Alhambra is gorgeous. I did once visit on a Saturday night, having thoroughly recommened it to a group of friends, and sadly the kitchen had run out of nearly everything, and kept having Serrano ham offered to us which we really didnt want. Apart from that small hiccup, experience has always been amazing, please do check this place out and sample what tapas are meant to be.
Great tapas stop with very very fresh food. The wine selection is very admirable and the staff is very knowledgeable about both the food and the wine. The only down-side is that even for a tapas stop this is quite small.
Been eating and drinking in here since it first opened, and have no fault with the food, drink and general service. Today, however was an eye-opener - had an irate, reactionary customer run after me - after I brushed passed him (impossible not to in a space so small) thinking I'd taken his wallet from his back pocket (when he'd put it elsewhere) No defence from the staff, whatsoever. Stuff like this leaves a nasty taste in the mouth.
So, to end - great food, great drink, but be careful not to brush past anyone, lest you be treated like a criminal.
Simple, basic, intimate location in Bermondsey Street with amazingly fresh, tasty ingredients served tapas style.
Aside from the lo-key atmosphere the genius of this place is the exquisitely fresh and hand picked ingredients - I eat a lot of boquerones and seafood generally and the selection of fresh sea produce here - whilst not especially broad - is of genuinely superb quality. I was dining alone but the boquerones were so good I smiled and the scallop so fresh it made me giggle out loud.
The only downside is that this place is really, really small - maybe 15 diners at a push - so am very much looking forward to the promised larger restaurant from the same chef also planned for borough. However if you are looking for an awesome spot to while away a late afternoon, eating exceptional tapas, drinking and people watching down Bermondsey Street then this my friends ...is for you.

Jose opens today and I hope it's a great success, Jose himself is a great Chef and deserves all the good reviews which are no doubt coming.
My suggestion would be to review restaurants, not just Jose in particular, after they have been open for several months or at least a week.
Jose opens today, 1st of June, so I wonder how you reached certain conclusions already, such as "lots of people want to eat there", "you can expect a vibrant atmosphere".
I give 5 starts as a good gesture but believe reviews should be factual and not a poor attempt at PR.
