Get to know your Cava
For those not in the know, Cava is the Spanish word for wine cellar, where wines are kept until they are fully matured and drinkable. This doesn't mean that any old wine can be called a Cava however, as the label is strictly regulated to ensure that only the best quality wines from the specified regions named that. A richly varied wine that reflects therer are around 1,300 different Cavas from the growers and bodegas of Spain.
